I recently tried making chicken salad for the first time in quite awhile. Once the chicken was broken up in a bowl and mayo-a-fied, I just kept adding more and more ingredients to it until I was satisfied/out of ideas. The result was delicious!
Poach four chicken breasts in chicken broth with a little bit of thyme.
Cut the breasts into cubes. Pull the cubes apart as you drop them into a medium sized bowl.
Add a healthy dollop of Hellimans mayo.
Add about 2 tbs of Sriracha.
Dice and add 5-6 mini (the in two inch long) dill pickles.
Cook 4 strips of bacon until its nice and crisp, let cool, chop, and add to the chicken salad mixture.
Chop and add a handful (or less depending on preference) of walnuts.
Give it a good mix, and enjoy!
